Easy Caramel Shortbread Recipie

Hi everyone and welcome back to my blog.

First of all I would like to thank all of you for following my blog I really am very grateful!

Since I was little caramel shortbread has always been something I have loved but I have never found an easy recipe to follow until the other day so i've decided to share it with you since it tastes so good.

You will need:

For the shortbread:
250g- Plain Flour
75g- Caster Sugar
175g- butter

For the caramel:
100g-Butter
100g Light Brown Sugar 
2 x 397g- Cans Condensed Milk

For the topping:
200g-Milk(Dark) Chocolate
110g White choclate


Method

1- Heat the oven to 180 degrees.
2- Lightlty grease a 33cm x 23cm tin (If the tin is a bit smaller than this dont worry, you dont need to change measurements)
3-Mix together the flour sugar in a mixing bowl.
4-Rub in the butter until the mixture is the same as breadcrumbs.
5-Kneed the mixture together to form a dough and then press into the base of the tin.
6-Prick lightly with a fork and bake for about 20 minutes or until firm to touch and lightly brown.
7- Leave the shortbread to cool.
8- To make the caramel place butter,sugar and condensed milk into a pan and heat gently until all the sugar is dissolved ( you need to keep stirring all the time and make sure your reaching all parts of the pan or the sugar will burn and you will have to start again)
9- Then reduce the heat and stir continuously until the mixture thickens.
10-Pour over the shortbread and put in the fridge to cool.
11- Once the caramel is firm you can start on the topping.
12- Melt the milk or dark chocolate in a heatproof bowl over a pan of simmering water.
13- When melted remove from the heat and pour all over the caramel.
14- Then melt the white chocolate the same as before.
15- Drizzle fine lines over the milk/dark chocolate and put into the fridge to set.
16- Once the chocolate is hard you are ready to cut into squares and enjoy!
